- 750g (1 1/2lb) waxy potatoes, such as Charlotte, sliced lengthways
- 1/2 lemon, finely sliced
- 3 fresh or dried bay leaves
- 3 tbsp olive oil
- Preheat the oven to gas 6, 200°C, fan 180°C.
- In a large bowl, toss the potatoes with the lemon, bay leaves olive oil and some seasoning. Spread the potatoes out on a baking sheet in a single layer. Roast for 30-35 minutes, turning the potatoes halfway through cooking, until tender, golden and crisp at the edges.
